Party potatoes will satisfy even the hungriest crowd! How do I know? Read on.

Back in college my volleyball team was in my hometown playing in a tournament. Mom was gracious enough to accept my request to host a team dinner at the house. Mom always says her goal is to prepare enough food to feed “Cox’s Army.” Maybe this is some secret service special detail that only a Mom would know about, because I don’t remember reading about “Cox” in any of my history classes.

1 bag cut frozen broccoli (small bag)
1-8oz. pkg. cream cheese
1/2 block Velveeta cheese
2 cans evaporated milk

In saucepan over low-medium heat, place milk and cheeses until cheese is melted. Once all is melted and smooth you may add more milk if you like it thicker. I usually wait until I add the broccoli, sometimes the water from the broccoli is enough.

1 qt. water
2 c. diced potatoes
2 chicken bouillon cubes
1 c. diced onion
20 oz. frozen broccoli, chopped or 1 bunch fresh broccoli
2 cans cream of chicken soup
1 lb. Velveeta or American cheese

Mix water, potatoes, bouillon, onion and broccoli together.
Cook until done, about 20-30 minutes.

Add soup and cheese.

Simmer 15 minutes.
